The thing that separates a professional watercolour from a student one is not brightness, it is what the pigment does on wet paper. Professional ranges are single-pigment where possible, so mixes stay clean instead of turning to mud after the third colour. Student ranges stretch expensive pigments with filler and substitute cheaper alternatives under hue names, which is why a student Cadmium Yellow Hue mixes greyer greens than the real thing.

Pans or tubes

Pans are for working small and travelling: they rewet, they waste nothing, and you can carry a full palette in a tin. Tubes are for working large, because you cannot lift enough pigment off a pan fast enough to charge a full-sheet wash. Most working painters end up with both. Honey-binder paints such as Sennelier rewet more readily from dry than gum-only formulas.
