A varnish is meant to be removable. That is the whole point: it takes the dirt and UV damage instead of your paint, and a conservator can strip it off decades later. Which is why you never varnish an oil painting before it is dry all the way through, not just touch-dry, or you seal solvent into the film.

How long to wait, and which finish

Acrylic needs a few days; oil needs months, longer for thick passages. Gloss deepens darks and raises contrast, matt kills glare but slightly greys the shadows, satin sits between. Fixatives are a different job entirely: workable fixative lets you keep drawing over charcoal or pastel, final fixative does not.
