What makes a soft pastel soft is how little binder is in it. Sennelier's extra-soft sticks are close to raw pigment held together with just enough gum to survive handling, which is why they crumble if you press hard and why the colour sits on the paper with almost nothing between pigment and eye.

What that means in practice

You need paper with real tooth. Smooth paper fills after one or two layers and refuses to take any more. Sanded or textured pastel surfaces let you build six or seven layers. Work light to dark, keep a rag for your fingers, and accept breakage as normal rather than a defect.
